Dinner Tonight: Pork Chops With Balsamic Onions

Balsamic onions make a delicious condiment for any meat. Serve with a side of store-bought Major Grey's chutney and parmesan mashed potatoes.

PORK CHOPS WITH BALSAMIC ONIONS

2 tablespoons olive oil (divided use)
4 (6-ounce) boneless skinless pork chops
1 teaspoon salt
½ teaspoon pepper
1 medium yellow onion, cut into ¼ -inch rings
¼ cup balsamic vinegar

Humble ingredients, done just so, make pork chops simple, satisfying and special.

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper. Cook until browned and cooked through, 5 to 6 minutes per side. Transfer to plate.

Heat remaining oil in the skillet over medium heat. Add onion and cook, stirring occasionally, for 3 minutes. Add the vinegar and cook until the onion is soft, 2 to 3 minutes. Place pork chops on top of the onions and cover with lid to keep warm prior to serving. Serves 4.
